Back to work!

Yeah, yeah, yeah. So it was back to work today. Monday, a fresh week ahead. Since I wasn’t very healthy over the holidays I’m determined to make this last week of 2009 a healthier one.

I started out with my morning coffee to-go, but forgot my picture! Shame. Trust me, it was blissful.

Once at the office I whipped up my oats. I then realized I forgot my banana at home. Wow this was a very forgetful Monday morning.

Time to hydrate. I never get in enough water over the weekends/holidays.

A co-worker’s wife had a baby over the holiday break. The proud new dad came around handing out “cigars”.

It was cute. You could tell how excited he was about his new baby boy. Man, there have been lots of babies being born lately! I guess I should just accept that I’m at the age (32) where people are having babies. ;)

The wonderful hubster bought me a cd for Christmas. It’s George Winston who is an awesome pianist. I love the style of music he plays. George Winston has albums out for each season and the hubster even got me the one for my favorite season: Autumn.

By 11:30am I was hungry so decided to have lunch a bit earlier than usual. I brought a salad today along with two Boca Chik’n nuggets to put on top. I’ve never tried these Boca nuggets before but thought they might be a nice salad topper.

I have to admit, they don’t look the most appetizing, but neither do real chicken nuggets of this type.

If you guys have Taco Cabana near you here’s a nice tip: Save the salsa bar cups! They have these awesome little cups with lids at their salsa bar that are perfect for taking along dressings/dips/sauces on the go. The container is fairly small but fits 2-2.5 Tbsp perfectly. I always save mine now.

The chik’n nuggets were just ok. They were honestly a bit bland although I could see someone who likes this style of nuggets enjoying them more with a dipping sauce. Maybe if they had more seasoning they would be better. I may try them again and add some Frank’s hotsauce on top. Now THAT sounds tasty! God, I love Frank’s hotsauce. hehe

Because I ate lunch a bit earlier than usual I ended up having two afternoon snacks: an apple and some Oikos.

I really should have cut this guy up. He was a big apple and it was hurting my teeth/gums trying to bite off bits.

A more soothing snack:

Oikos is the best yogurt I have ever had. Period. There may be a better one out there, but I haven’t found it yet. I added some raisins. Yum!

After work I hit the grocery store. I got most of what I needed at Whole Foods yesterday, but needed a few other items that WF doesn’t carry. Once home I started cooking.

I couldn’t help it; I HAD to have the roasted brussel sprouts with pears again! Brussel sprouts are a bit of a pain to prep with all that trimming, but so worth it.

The house smelled so good after 30 minutes in the oven. That fresh Thyme is key!

I also made us grilled chicken on my new grill pan I got for Christmas (thanks Mom)!

I seasoned the chicken with onion powder, salt, and dried thyme.

It turned out ok but could have used more seasoning. I think some garlic would have helped.

I made myself a water and pure pomegranate juice drink.

Hubster and I are trying to sit down for dinners more at the house. A lot of times we will eat dinner in front of the TV or our computers. At least a couple times a week we’re going to try to actually sit at our dinner table like civilized human beings. Tonight was one of those nights.

We had mini pitas with pesto as a side dish.

It was a really nice meal. Sitting down, talking, and enjoying the meal with my favorite person in the world was an awesome way to spend the evening. Also, I just enjoyed the whole process. The more I cook the more I love it. Preparing delicious food is just very satisfying. Sharing it with loved ones is icing on the cake.
